Monday - Roasted Chicken and Pear Spinach Salad (although the recipe doesn't call for the chicken I like to add it to make it a full meal)
Tuesday - Spiced Eggplant with Bulgar Salad
Wednesday - Chicken Salad with Avocado Dressing
Thursday - Roasted Cauliflower with Shallots with Chard and Dukkah
Friday - Quinoa, Fennel, and Pomegranate Salad
Saturday - Chicken Skewers with Meyer Lemon Salsa
